Weekly Meal Plan #3

This week’s meals used up a number of ingredients that were still hanging around, just waiting to go bad. I had to switch a couple of things out from last week since Luke offered to make Chicago Deep-Dish Pizza one weekend night, and I never give up the opportunity for pizza, especially when made by someone else. Fortunately, the final meal from last week used mostly frozen or pantry items, so the only thing that was going to spoil was the cilantro. The cilantro was already brown and slimy, so I had to toss it regardless.

I also decided to let the kids watch a movie Friday night so Luke & I could have a “date.” This is awesome on multiple levels: Luke and I get a couple hours of quiet hang-out time, I get to make a recipe that I would not otherwise make during the week (scallops!!), and the kids get a fun treat with a movie and popcorn. Wins all around.

Sunday: Leftovers. Homemade Turkish flatbread and hummus. Ina Garten’s brussel sprouts – sub bacon for pancetta.

Monday: Salmon with horseradish sauce, quinoa, frozen veggies. Kids: Fish sticks.

Tuesday: Eggplant parmesan over ziti with garlic bread. Use frozen eggplant and frozen sauce.

Wednesday: Order out.

Thursday: Chicken with Green Olives & Lemons (cookbook) over rice. Kids: Chicken nuggets. Try grown-up chicken.

Friday: Brown Butter Scallops and Risotto with Bluebird cocktails. (Date night!) Kids: Mac n cheese.

Saturday: Chicago Style Pizza. Kids: White pizza. (Bonus: Homemade cocktail sauce for shrimp at lunch). Mini apple pies.

As you can see, by checking the freezer, fridge and pantry before planning the meals, I really don’t have to buy a ton this week. Of course, there are the “every week” items, like fruit, granola bars, milk, eggs, toilet paper, etc etc.
